Carrot Soup


Ingredients
  • 6-8 large carrots, sliced
  • 3 large onions, chopped
  • 2 cloves of garlic, minced or chopped
  • 2 cups stock (chicken or vegetable)
  • Black pepper
  • Salt
  • Chopped parsley or coriander
Directions
  1. Heat a small amount of oil in a large pot over medium heat. Add onions, garlic and carrots. Cook until onions are soft and carrots are cooked.
  2. Add stock and cook over low heat for about 40 minutes. Add pepper and salt to taste.
  3. Puree in a food processor or blender (the soup should be quite thick).
  4. To serve, garnish with parsley or coriander.
Serves 4
